Garcia supports regulation of chorizo-making

CEBU, Philippines — Cebu City Mayor Raymond Garcia welcomed the regulation of chorizo-making to ensure clean, quality and safe products as the city initiate efforts to further promote the chorizo industry.

 “Naa atong National Meat (IS), naa atong DVMF to help us regulate chorizo, nga it will be limpyo ug kinahanglan gyud nga limpyo kay di sad ta gusto og experience taga-abroad, taga-Manila mamalit sa atong chorizo unya madaot. Madaot sad gyud tang tanan,” Mayor Garcia during the opening of the City’s Chorizo Festival.

Garcia, through the City’s Public Information Office, said that the whole industry will suffer if this is unregulated.

“The whole industry suffers, so that’s why it’s very important that we have regulators to regulate the chorizo-making, nga kinahanglan limpyo ang pagbaligya ug limpyo gyud ang mao nga produkto,” he added.

Along with this, Garcia said he is looking at improving the Chorizo de Cebu Festival for the benefit of the chorizo makers as well as to promote tourism here.

 “I am very happy nga naa tay festival na karon sa chorizo. I think kaning chorizo-making is one of the aspects nga kinahanglan gyud nato i-promote ilabi na diri sa siyudad sa Sugbo. Everybody talks of our puso-making, everybody talks of our lechon-making, but seldom ra gyud kaayo ang atong chorizo-making,” Garcia earlier said.

 Garcia also look into the Department of Veterinary Medicine and Fisheries (DVMF) and even the tourism sector to help promote the chorizo industry.

“Because important kaayo ni siya. Because this is part of our history, this is also part of our culture,” Garcia said.

Aside from being part of the Cebuano culture, chorizo-making is also income-generating for the Cebuanos, he said.

Garcia also wanted the original maker of the Chorizo de Cebu be known and awarded during the city’s Heritage Awards.
