Redefining Tea Time

CEBU, Philippines – Enjoying a fresh cup of tea now goes beyond the usual tea pot and that white China-cup.

The Cebu City Marriott Hotel launched the Tea Syphon station last October 21. The hotel’s entire Adelfa function room was momentarily fashioned into a tea brewing chamber with numerous syphon sets that steeped various tea flavors and aromatic infusions.

Beverage Specialist/Mixologist Marlon Casiño did a live demonstration showing the procedure of preparing one’s favorite cup of tea. Incorporating simple laws of physics and molecular gastronomy, he started by filling up the bottom container with the prescribed amount and preferred flavor of tea and a good measure of an all-organic flavored syrup. After 4 to 5 minutes, when the mixture was completely heated, it was syphoned to the top chamber for another 2 to 3 minutes of brewing, this time infused with herbs and natural ingredients. Once the syphon heater is turned off, the drink comes down to the bottom carafe and is ready to be served.

All tea syphon stations featured a variety of tea flavors available at the hotel, namely: pure green tea, jasmine green tea, Ceylon, English breakfast, peppermint, chamomile and earl grey tea. The set up also introduced the healthy infusion of moringa leaves, locally known as “malunggay,” which fortified every batch with a rich level of vitamin A, C and iron. More traditional garnishing includes citrus peels, mint leaves, lemongrass and the like.

Everyone married their warm cups with the hotel’s famous selections of cheesecakes, fruit tart pastries and moist delectable cookies that made the entire event one fine “TEArrific” experience.
