Early start eating healthy (second of three parts)

CEBU, Philippines -  Last week, we shared some cool, healthy breakfast ideas for children, here's for lunch that they will also enjoy.

GRILLED FOOD

Coat chicken breast (sliced into strips or cubes) and vegetables (broccoli, carrots, cauliflower, tomato) with some oil and sprinkle with salt and pepper. Grill on a hot pan or put on a barbeque stick and grill. Serve with some soy sauce, calamansi, or tomato dipping sauce.

SALADS

Most people think that salads are just for grownups. Not so. You can make eating salad fun for your child: allow him/her to eat it with their hands, make it colorful, make sure their is lots of texture and flavor. Give your child a salad sandwich! Prepare some lettuce and teach him/her to wrap up grilled meat, tuna chunks in the leaf and dunk the wrap in a dressing or soy sauce.  Give your child sticks of raw vegetables like carrots, singkamas, or cucumber. Serve with a yogurt dipping sauce, bean dip (blend some chickpeas with lemon, salt and a little oil or yogurt), or salad dressing. Add fruit like oranges or apples to the salad.

 

SPECIAL FRIED EGGPLANT

 

Ingredients

4 medium size eggplants

2 pcs egg

½ cup leftover meat or fish

½ cup carrot, shredded

½ cup potato, shredded

1 pc onion, minced

1 tsp iodized salt

 oil for frying

 

 

Preparation

Grill the eggplant, peel and set aside. Beat eggs. Combine meat, carrots, potatoes, onion and iodized salt. In a plate, flatten the peeled eggplant and place 2-3 tbsp of the egg mixture. Fry until golden brown. Make up to four servings.
