A restaurant inspired by Mangroves
Sunlight Ecotourism Island Resort (SETIR) opened their new restaurant Mangrove last Independence Day, June 12.
Spearheaded by SETIR’s chief operating officer, Ryna Brito, and head chef John Kyle Ureta, Mangrove combines Filipino cuisine, art, culture and education into one casual-dining restaurant.
The menu of Mangrove includes facts about the environment, saving trees and their benefits and the food options are inspired by popular dishes from regions in the Philippines that are abundant with mangroves. These included the Piyassak of Sulu, Ensaladang Chamba of Zamboanga, and Tiulah-Itum of Zambales and Tawi-Tawi.
In line with Mangrove’s creed of mixing education into its restaurant concept, Coron aquatic biologist Rechie Cabales spoke about the benefits of mangroves in the ecosystem.
Filipino art was represented through a mural painted by Filipino artist Kookoo Ramos, while Filipino culture was alive with live OPM performances by a local band from Coron and Filipino cultural dances such as the Tinikling, Sayaw sa Cuyo at Toting, and Pandanggo sa Ilaw by students of the Palawan State University and Coron’s Lahiwayas Dance Troupe.
Guests came in Filipiniana outfits to enjoy the Filipino dinner and cocktails that were all made from Filipino liqueurs and spirits. Issa Pressman performed and DJ Euric Lumanog played his tunes at an after party where guests danced the night away.
