Sparkling rhythm in Boracay
It was a warm evening on the island of Boracay two weeks ago when Sparkling Rhythm, a gourmet festival held in collaboration with Moët-Hennessy, was launched at the Sagana Ballroom of Shangri-La’s Boracay Resort and Spa. The set-up of golden bottles, goblets and glimmering crowns made for a festive tableau to welcome guests upon entering the ballroom.
The event featured a six-course set menu paired with overflowing Estates & Wines collection. The appetizer was a delicate smoked salmon with roast walnut cream cheese and seared scallop with lobster and avocado salad paired with 2008 Domaine Chandon Chardonnay from Yarra Valley, Australia. The second course was roast chicken and potato velouté with truffle oil served with a 2007 Cloudy Bay Sauvignon Blanc from New Zealand’s Marlborough region. To cleanse the palate, a calamansi and mint sorbet was served. Then came the pan roasted sea bass with porcini mushroom ravioli and crispy ham, which was paired with a 2004 Cape Mentelle Cabernet Sauvignon from the Margaret River in Australia. The fifth course was wagyu beef, fondant potato, confit shallot with red wine jus paired with a 2007 Terrazas de los Andes, Reserva, Malbec from Argentina. A serving of black forest gateau paired with Hennessy XO ended the evening’s splendid dining experience.
The heart of this event was an initiative to help the surrounding community by giving a portion of the proceeds to the Philippine Red Cross Boracay Chapter.
Sparkling Rhythm, the gourmet festival at Shangri-La Boracay’s Sirena, runs until today.
