MANILA, Philippines - Students from Enderun Colleges won a gold medal at the recently concluded World Food Expo (WOFEX).
Gen Oliva and Joma Tuaño of Enderun Colleges won the Young Chefs Team Challenge category of WOFEX’s First Philippine Culinary Cup, held recently at the SMX Convention Center. The students, both taking up BS in International Hospitality Management with specialization in Culinary Arts, bested 18 other entries in the category.
Their entries were a pair of dishes from Alain Ducasse Formation: an appetizer of Salad Homard (Lobster Salad), and a hot main course of Free-range Chicken Breast with Foie Gras, Garnished with Garden Vegetables and Parsley Sauce.
Prior to the competition, the students were mentored and coached by chef Marc Chalopin, ADF+Enderun executive chef. They had also just recently finished a five-month internship with Alain Ducasse Formation in Paris, France, having been sent by Enderun through its academic partnership with the professional training center of Alain Ducasse.
