Holiday Inn Clark’s Mequeni Restaurant brings to life the best of Vietnamese Cuisine for the second time around with an appetizing two-week Vietnamese Food Festival. From Aug. 25-Sept. 7, 2014, Chefs Dinh Hung Tran and Thanh Nguyen Ho from the InterContinental Hotel Nha Trang will present the unique flavors of Southern, Central and Northern Vietnamese cuisine.
Common Vietnamese food ingredients include fish sauce, shrimp paste, soy sauce, rice, fresh herbs, and fruits and vegetables. Traditional cooking is greatly admired for its fresh ingredients, minimal use of oil, and reliance on herbs and vegetables. With the balance between fresh herbs and meats and a selective use of spices to reach a fine taste, their food is considered one of the healthiest.
The beauty of the cuisine lies in the simplicity of the cooking, an abundant presence of noodles, the minimal use of spices and the reliance on fresh herbs to bring flavor to the food. Special dishes to be noted during the festival are the banhkot (mini pancakes), pho bo (beef noodle), bokho (beef stew with carrots), ntang stiye (wok-fried prawn with tamarind sauce), ca kho to (caramelized fish), bun cha hn (grilled pork Hanoi style) and of course the legendary nem cuon (salad rolls).
