MANILA, Philippines - The Center for Culinary Arts (CCA, Manila), the country’s top culinary school, is once again trailblazing the industry by putting emphasis on Filipino cuisine.
It is the vision of CCA, Manila that Filipino cuisine will one day be known in the Asian, even in the international, culinary foodscape.
“This program is part of CCA, Manila’s mission to promote Filipino cuisine in the Asian and international markets and in line with the Kulinarya Program of the Department of Tourism,” said Chef Gigi Angkaw, Continuing Education Program manager of CCA, Manila.
“The program is designed for domestic and international tourists who would like to experience and learn Filipino cuisine,” she added.
The Kulinarya Short Courses will be conducted in CCA-Farmer’s Market every second Friday of each month, for half day.
There will be a minimum of five persons and a maximum of 15 participants per session. That makes it an ideal activity for bonding and teambuilding - a departure from the usual shopping sprees and out-of-town excursions of balikbayans who want to rediscover their roots and revive their passion for Filipino food.
“The program will start with a tour of Farmer’s Market for familiarization of Philippine ingredients. After that, a hands-on cooking demonstration will follow. What’s nice with this short course is that every participant will have his/her own workstation, giving each one a hands-on experience. The chef-instructors will make sure that each one is following instructions as well. Then, the fun part of food tasting and sumptuous lunch will follow,” Angkaw said.
At least four Kulinarya dishes will be prepared by the participants, including pork/chicken adobo, sinigang na isda or seafood, sotanghon guisado and for dessert, maja blanca.
A component of the Cultural Tourism Program of the Department of Tourism, Kulinarya is a tourism product that seeks to introduce Philippine flavors to the local and international scene. The program hopes to create an interest in the country through its cuisine.
