MANILA, Philippines - I blame them for my late night sweet cravings. Pam Pastor’s Facebook status messages almost always have something about cupcakes in it. Whether about getting the right frosting or texture, all night experiments and endless baking sessions, somehow you can see, smell and taste these little creations that come from her Sugar Rush Lab.
One Saturday, Pammy woke up late and forgot that she was supposed to bring dessert for her college reunion. And so she and now business partner Jill Lejano started on a supermarket hop and baked their firstborn chocolate cupcakes named Dark Ninja. “Because they disappear fast — ninja fast!” as Pammy relates. Like 80 cupcakes gone in less than 60 seconds.
The following week on a sleepover, Giff Ricarte and friends were so eager to learn how to make cupcakes that they all ended up experimenting on how to make that perfect cupcake. “Giff was the most enthusiastic of the lot, loving every moment of creating cupcakes – from mixing the batter and taking pans out of the oven to adding sprinkles and tying lovely ribbons around the cupcake boxes,” Pam recalls that first night when their trio of cupcake craziness was formed.
“Everything started with the Dark Ninja,” said Pammy of that turning point when their chocolate babies kicked them in the nuts and said, “Hey freaks! What are you wasting your time on? Start making more of me!”
And so they did. Their devotion to their sweet craft is infectious and their addiction to try new flavors is contagious! “One bite is enough to tell us that this cupcake is worth it – mess, dirty dishes, burnt fingers and all.” Pammy, Jill and Giff have been spending extra time in the kitchen now that the holiday season is upon us, and a cute, yummy cupcake priced below P100 each is a sweet way to perk your family and loved ones this merry, merry season.
