MANILA, Philippines - Gourmands experienced a memorable evening in Tuscany at the “Duetti in Toscana,†a six-course wine dinner held at Paparazzi, the Italian fine dining restaurant of Edsa Shangri-La, Manila. Famous for its Chianti and Brunello Di Montalcino wines, Tuscany is generally characterized by simplicity when it comes to cuisine, using natural and fresh ingredients. The culinary journey showcased Tuscan flavors with dishes that were specially crafted by Paparazzi chef du cuisine Roberto Cimmino and meticulously paired with Ruffino fine Italian wines. The first entrée, Petto’Oca, Funghi, Uva or duck breast with lightly picked wild mushrooms, was served with the well-structured Super Tuscan Blend, Ruffino Modus, 2007; while the second main course, Manzo, a slow-braised beef cheek, lardons, shallots and porcini, was complemented with a glass of the fine and well-known Tuscan wine, Brunello di Montalcino, Greponne Mazzi, 2004, DOCG. The “Duetti in Toscana†is just one of the many wine dinners at Paparazzi where meals are faithfully Italian yet delightfully inspired and inventive.
