Fish And Chips
Ingredients:
For the chips:
1 liter Magnolia Nutri Oil
5 large potatoes, cleaned and cut into wedges
Salt to taste
For the dry dredge:
2 cups Magnolia All Purpose Flour
2 tbsps salt
1 tbsp. pepper
For the batter:
1 cup Magnolia All Purpose Flour
1 tbsp paprika
1 tbsp. salt
A pinch of tbsp ground black pepper
1 bottle San Miguel Cerveza Negra
Fish: 1 kilo cream dory fillet
Sauce:
½ cup Magnolia mayonnaise
2 tbsps chives
salt and pepper
Garnish: 1 pc. lemon, quartered
Procedure:
Chips: In a medium wok, heat oil. Deep-fry the potato wedges until golden in color. Remove from oil and season with salt.
Dry dredge: In a Glad Freezer bag, combine all the dry dredge ingredients. Set aside.
Batter: Combine flour, paprika, salt, pepper and beer in a bowl. Mix until smooth.
Fish: Dip fish fillets in dry mixture, then in prepared batter. Deep fry in hot oil until color is golden (about 3-5 minutes).
Drain excess oil on paper towels.
Sauce: In another bowl, combine mayonnaise and chives. Season with salt and pepper. Transfer in a serving dish.
Arrange fish and chips on a serving dish and serve with sauce. Serves 5-6.
