MANILA, Philippines - Who is the American chef and baker who is in the forefront to revitalize sourdough and artisan breads?
In June 1989, she opened the restaurant Campanile. When developing the restaurant menu and sourcing premium ingredients and vendors, she soon realized that the same bread she tasted and studied in Europe was nowhere to be found in Los Angeles. In fact, there was no authentic artisan bread in all of Southern California. Longing to serve a crisp crust and a soft airy interior, with the tang of a sour dough starter, she began teaching herself the ancient art of sourdough making.
This paved the way for the opening of La Brea Bakery adjacent to Campanile. She developed hundreds of recipes, keeping the shelves stocked, and 20 years after, La Brea’s breads are now available in 17 countries.
