MANILA, Philippines — There are so many types of auspicious food that you can indulge in for Chinese New Year to bring you good luck in the coming year.

Shrimps are one of them, as they symbolize good fortune and happiness.

Luckily, they are also a top favorite among seafood lovers because of their unique flavor and adaptability to dishes.

And what better way to enjoy shrimps as you welcome the Year of the Wooden Snake than in a serving of your favorite Hot Shrimp Salad?

Here’s an easy-to-follow recipe from Home Foodie and San Miguel Pure Foods Culinary Center:

Hot Shrimp Salad

Ingredients:

2 cups cooking oil, for deep-frying

1 cup (100 grams) shrimps, shelled

1/2 cup Magnolia Brown Eggs, egg whites only

1/2 cup (60 grams) Magnolia All Purpose Flour

1/2 cup (150 grams) canned lychees in syrup, drained and halved

1/2 cup (82 grams) pineapple chunks

1/2 cup (60 grams) cucumber, cut into chunks

1/2 cup Magnolia Cheezee, cubed

For the dressing:

1/2 cup Magnolia Real Mayonnaise

1/4 cup condensed milk

Iodized fine salt and pepper to taste

Procedure

1. Heat oil in a deep frying pan.

2. Coat shrimps with beaten egg whites then dredge in flour. Deep-fry in hot oil until golden brown in color. Set aside.

3. In a bowl, combine lychees, pineapple, cucumber, and cheese. Add shrimps and then gently toss.

4. Prepare the dressing. In a pan, heat mayonnaise and condensed milk over low heat. Season with salt and pepper to taste.

5. Pour into lychee-shrimp mixture. Toss and serve immediately.

Makes 4 to 5 servings.
