MANILA, Philippines — Ju.D Lao has always been known as the "Fruitcake Queen," for Christmas isn’t Christmas without a taste of her famous premium fruitcakes, which have been formulated to suit the Filipino taste.

But it isn’t Christmas yet, and her Fruitcake recipes are top secret, of course.

Fret not because she shares the recipe of a regular loaf cake, Caramelized Banana Cake, which is so good you’d bake it again and again.

Caramelized Banana Cake

Ingredients:

2 cups All-purpose flour

1 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. cinnamon

1/2 tsp. nutmeg

3-4 pcs. ripe bananas

1/2 cup milk

1 tsp. lemon juice

1/2 cup butter

3/4 cup dark brown sugar

2 eggs

1 tsp. vanilla extract

1 pc. banana for topping

Procedure:

1. Sift together all the dry ingredients except sugar.

2. Mash the bananas and add the milk and lemon juice.

3. Cream butter with dark brown sugar.

4. Add eggs and vanilla extract.

5. Start mixing the sifted dry ingredients in. Do this alternatingly with some of the mashed banana and milk mixture.

6. When all the ingredients have been combined, pour the batter into a pan lined with grease-proof paper. Preheat the oven to 300°F.

7. Top the batter with some sliced bananas.

8. Bake for about 55 to 65 minutes. Take the cake out of the oven and let it cool.
