MANILA, Philippines — Beef stew — it is one of the most comforting dishes you can ever have.
The texture of tender and flavorful meat, almost melting in your mouth as you savor it with its saucy goodness. You can make it even healthier by using olive oil to sauté the ingredients together. Here, Doña Elena Olive Oil shares the recipe of Italian Beef Stew, which you can cook up in the comfort of your home.
Italian Beef Stew
Ingredients:
1 kg. beef brisket, cut into cubes
1/2 cup Doña Elena Pure Olive Oil
1 cup red onion, roughly diced
1/2 cup carrots, roughly diced
1/2 cup celery, roughly diced
2 Tbsps. garlic, shaved
2 pcs. bay leaf
2 cans Jolly Tomato Paste
2 liters water
1 cup potatoes, peeled and quartered
1 cup carrots, peeled and diced
1/2 cup Doña Elena Pitted Green Olives
1/2 cup Doña Elena Pitted Black Olives
Salt and pepper, to taste
Doña Elena Extra Virgin Olive Oil for drizzling
Procedure:
1. In deep sauce pan, sauté onion, carrots, celery, and garlic in Doña Elena Pure Olive Oil. Add bay leaf.
2. Stir in beef and cook until brown. Pour in Jolly Tomato Paste, and continue to sauté for 3 minutes. Add water and simmer for 20 minutes.
3. Add potatoes and simmer for 10 minutes. Then add carrots and olives, and continue to simmer until beef is tender. Add water if stew dries out. Stew should have a rich and thick sauce when beef is tender.
4. Season with salt and pepper.
5. Serve with rice or pasta, and drizzle with Doña Elena Extra Virgin Olive Oil.
