Recipe: Chef Alvin Ong's fruity latte drink

MANILA, Philippines — A good latte drink will certainly perk up your day, especially one that is freshly made at home. How about adding a dose of healthy and delicious blueberries to it?

Chef Alvin Ong does, and it’s become a favorite indulgence of his. He uses fresh and frozen blueberries from the U.S. Highbush Blueberry Council for best results.

Blueberry Latte

INGREDIENTS: 

Blueberry jam

180 ml fresh milk

60 ml espresso

For the blueberry jam:

500 grams frozen blueberries

125 grams white sugar

30 grams water

Juice of 1/2 pc. lemon

PROCEDURE: 

1. Make blueberry jam. In a saucepan, combine blueberries, sugar, water and lemon juice. Let it simmer until it thickens. Let it cool to room temperature.

2. Put 2 tbsps. of blueberry jam in a highball glass. Add a few cubes of ice.

3. Pour in milk until 80% of the glass is full. Then, pour in the espresso shot.

4. Serve immediately.

*Yields 20 to 25 servings.
