Recipe: Chef Alvin Ong's blueberry oatmeal bars

Blueberry Oatmeal Bars
Ingredients:
For the crust:
60 grams rice krispies
100 grams marshmallows
15 grams butter
For the blueberry jam:
1 kg fresh or frozen blueberries
250 grams white sugar
60 grams water
Juice of 1/2 pc. lemon
For the crumb:
40 grams butter
40 grams all-purpose flour
100 grams Granola
Procedure:
1. Line a 7x7-inch stainless baking sheet with baking paper.
2. In a bowl over a water bath, combine marshmallows and butter. Cook until all the mallows are melted. Take out from the heat and add in the rice krispies. Toss to coat evenly and spread inside the prepared ring. Flatten to form a crust. Chill.
3. In a saucepan, combine blueberries, water, sugar, and lemon juice. Let it simmer until it thickens.
4. Pour the cooked blueberries over the cooled rice krispies. Let it cool to room temperature.
5. In a small bowl, combine all the ingredients for the crumbs. Crumble to form a streusel and top over the blueberries.
6. Preheat oven to 185-degree-C.
7. Bake the bars for 7 to 10 minutes or until top is golden brown. Let it cool to room temperature and cover and chill before unmolding and slicing.
