Andi Eigenmann shares own Siargao recipe with secret ingredient

MANILA, Philippines — Actress Andi Eigenmann shared a secret to a less salty version of "Buyad" or "Tuyo" (dried fish). 

The actress and full-time resident of surfing destination Siargao uploaded her latest vlog on her family's YouTube channel, Happy Islanders. 

With her husband, professional surfer Philmar Alipayo, out on a tour because of the ongoing surfing season, Andi made a batch of dried fish with the help of her eldest, Ellie, and their relatives and friends. 

Her younger children, Lilo and Koa, were seen just playing around. Lilo helped once in a while, and even assisted Andi in cooking the Buyad later on.  

"The reason why I like to make Buyad is because mahirap humanap nu'ng hindi gaano kaparat (kaalat or salty). Gusto namin kami 'yung magtimpla ng saltiness," Andi shared. 

She helped prepare the Tuyo by cutting the fish into fillets and removing their gills and scales. The next step revealed her secret ingredient to make her version of Tuyo less salty. 

"So instead of using a whole lot of salt, we will use saltwater. From the ocean. Free," Andi shared. 

After washing the fish, she started to season them with salt, vinegar and whole peppercorns. She later on added crushed pieces of garlic. The final step was to leave the seasoned batch of fish on the roof overnight to dry.

Andi said they had to take advantage of the sunny weather because the island sees more gloomy weather during this rainy season. 

The next day, she cooked two viands ("ulam"). One was the fried Buyad, which Lilo helped cooking, while the other was leftover vegetables with Buyad cooked in "gata" or coconut milk.
