Cooking the next big thing
According to Chef Carlo, Brew Haus Pub & Eatery was inspired by the concept of food truck in the United States, where ingenious chefs who do not have the money to rent out a whole restaurant space opt for mobile kitchens. While grilled cheese is served mostly by these US food trucks, there was not a plenty of restaurants here in the Philippines which serve gourmet grilled cheese. Because Chef Carlo wanted to show the people what their palates have been missing all these years, he created his menu of Gourmet Grilled Cheese. Moreover, Chef Carlo believes that with his innovative cooking and brilliant flavors, grilled cheese will be the latest food trend, replacing cronuts and cookie shots.
Lastly, the idea behind the gastropub is to make sure the gourmet grilled cheese never goes above P280, so that people will appreciate and savor their meal without thinking about the money they are going to pay in exchange for their satisfaction.

The Gourmet Grilled Cheese menu aims to show people through their taste buds what they have been missing with the classic comfort food.
A grilled cheese doesn't work with just any old cheese. Prepare yourself for a transcendental experience by ordering the Triple Gourmet Grilled Cheese Sandwich (Cheddar, Mozzarella, and Blue Cheese. By putting together three types of cheese in one serving, Chef Carlo guarantees that people will enjoy the goodness of globules of cheese slowly oozing out of the edges of a golden brown crispy pan fried bread spread with butter.
