MANILA, Philippines - Chicken is undeniably one of the most common, affordable, and versatile ingredients. Chefs and home cooks can turn it into a myriad of dishes, from soups to salads, to pastas and pies. Just about every country has a famous chicken dish: chicken adobo in the Philippines, chicken Kiev in Russia, chicken yakitori in Japan, tandoori chicken in India, Southern fried chicken in the United States – the list is endless.
Chicken is also the perfect ingredient to play with in the kitchen. To inspire you to channel your inner chef here are five tasty and not your run-of-the-mill chicken recipes from the chefs of the San Miguel Pure Foods Culinary Center.
Double fried chicken
Ingredients:
1 kg. Magnolia Chicken Wings, cut each piece into 2 then set aside
Batter:
1/2 cup rice flour
3/4 cup cold water
1 cup rice flour, for dredging
Magnolia Nutri-Oil Palm for deep-frying
Soy garlic sauce:
1/2 cup Kimlan soy paste
1/4 cup corn syrup
2 tbsps. Shaoxing wine
Spicy soy sauce:
1/2 cup Kimlan hot chili
soy paste
1/4 cup corn syrup
2 tbsps. Shaoxing wine
1 tsp. gojuchang
(hot pepper sauce)
2 tsps. chili garlic sauce Procedure:
1. Batter: Combine rice flour and cold water. Set aside.
2. Pre-heat oil to approximately 350°F in a frying pan.
3. Dip chicken wings in batter then dredge in rice flour.
4. Deep-fry for 5 minutes. Drain on paper towels or baking paper.
5. Cool for 2 minutes then fry again for another 2 minutes over high heat.
6. Soy garlic sauce: Combine all ingredients, mix well.
7. Spicy soy sauce: Combine all ingredients, mix well.
8. Brush with prepared sauces. Makes 12 pieces.
