MANILA, Philippines - One of 2013’s biggest trends was food mash-ups, where chefs took two entirely different dishes that were perfectly good on their own and combined them to make a completely new dish.
One popular mash-up that burst onto the food scene in a big way, care of New York-based chef Keizo Shimamoto, was the ramen burger. New Yorkers queued for hours just to sample this East-meets-West concoction that earned rave reviews from foodies and critics around the world.
Inspired by the popularity of the ramen burger, the chefs at the San Miguel Great Food Club have provided their own recipe for this one-of-a-kind burger.

Ramen Burger
Ingredients:
For the bun:
1 pack ramen noodles, store-bought
1 egg
2 tsp Magnolia Nutri-Oil
For the patty:
1/2 kg Monterey ground beef
1/2 kg Monterey ground pork
2 tbsps soy sauce
3 tbsps light soy sauce
1 tbsp togarashi
1 tbsp mirin
Salt and pepper
2 tbsps Magnolia Nutri-Oil
For the sauce:
Soup from the ramen noodles
3 tbsps dark soy sauce
Salad greens for garnish
Procedure:
Cook the ramen according to directions on packaging until noodles are cooked but still firm. Drain broth from noodles. Reserve water for sauce. Toss noodles with one beaten egg. Press noodles into a ring mold. Chill to set. Pan-fry molded noodles on both sides in hot oil until lightly browned. Drain oil and set aside.
For the patty, mix all ingredients in a bowl. Season with salt and pepper. Form mixture into patties. Pan-fry patties until fully cooked. Drain oil and set aside.
For the sauce, boil ramen broth with soy sauce and reduce to half. Let cool.
To assemble, sandwich some salad greens and one patty in between two ramen buns. Drizzle some sauce over patty before serving.
