An afternoon of healthy and delicious cooking with chef Stephanie Zubiri

MANILA, Philippines - Tefal recently teamed up with executive chef Stephanie Zubiri of Modern Epicurean Kitchen for an afternoon of gastronomic delight. It was a fun, informative cooking demonstration where loyal customers of Rustan’s Makati learned a thing or two about natural, healthy cooking.

Chef Stephanie crafted recipes with easy to find ingredients and trouble-free procedures. She started with a healthy asparagus and leek soup. For the main course, she prepared a tangy and zesty skinned salmon fillet with red cabbage and simple yet luscious roasted bananas for dessert.

During the cooking demo, chef Stephanie used Tefal’s latest innovation: So Tasty, a new range which provides perfect heat and even heat distribution in pan while cooking with its diffusal base that is covered with copper particles for optimized heat diffusion.

So Tasty’s interior is made with Intensium coating, an extra hard mineral base, which is infused to other non-stick layers including a visible holographic layer.

Crispy skinned salmon fillets with mustard red cabbage stir-fry

For salmon:

Ingredients:

4 pcs. salmon fillet (skin on) or one large one for sharing (not salmon steaks)

1 tsp. turmeric

1 tsp. cumin

1 tsp. cayenne pepper

1 tsp. paprika

3 tbsps. olive oil

1 whole lemon cut into wedges

salt and pepper to taste

fresh basil leaves for garnish

Procedure:

1. Mix the spices with the olive oil and rub onto salmon fillets. Heat So Tasty Frying Pan or grill to very high heat. Heat on high for at least five minutes.

2. Place salmon fillets skin side down. Depending on thickness, let salmon cook for a good three minutes skin side down on high heat and flip flesh side down and cook for one minute.

3. Flip back on skin side and turn off the heat. Season with salt and fresh cracked pepper; serve with fresh basil chiffonade and lemon wedges.

For cabbage:

Ingredients:

500 g red cabbage

½ white onion

1 pc. small clove of garlic smashed

2 generous tbsps. Dijon mustard

1 tbsp. white wine or wine vinegar

1 tbsp. olive oil

salt and pepper to taste

Procedure:

1. Shred the cabbage into very fine strips. In a Tefal So Tasty Wok, heat olive oil on high heat, sauté onions and garlic until light golden. Add shredded red cabbage.

2. Cook on high heat for two minutes. When it starts to wilt a little, add Dijon mustard and white wine or wine vinegar.

3. Cook for another three to five minutes or until desired doneness. Season with salt and pepper and serve with salmon.
