A gastronomic experience
Bailli Delegue-Chancelier Michel Lhuillier and his lovely wife Amparito Lhuillier, Bailli de Cebu and grand dame of the city’s caring society, together with Shangri-La Mactan Resort and Spa general manager Joachim Schutte led the ever-growing Confrerie de la Chaine des Rotisseurs Cebu, as they hosted the 17th Induction Diner Amical at the grand and elegant Mactan Ballroom.
The event began with the induction of 11 new members, namely Alexander Farrugia, Marc Cools, Vincent Frasco, Luke Gagnon, Grace Guinefolleau, Joachim Schutte, Abdul Hafid, Richie Kang, Markus Kraus, Glauco Muzzi and Jean Marc Pasquet. A fabulous dinner, which showcased la nouvelle Chinoise included lighter, more delicate dishes that emphasized the freshness and clarity of flavors while achieving the traditional Chinese sensibility for balance.
The first of many courses included a trio of beef tenderloin, jelly fish roll and steamed chicken breast with ginger sauce. Next came the pan-fried scallop flavored with black bean paste. The first course was paired with Riverside Riesling 2006 Balbach Rheinhessen from Germany.
The third dish was also a treat — barbecue fillet of duck accompanied by thinly sliced mango and Chinese plum sauce, which was served with Spy Valley Pinot Noir 2006 of Marlborough, New Zealand.
The piece de resistance was an artful harmony of oven-baked Chilean sea bass glazed in miso paste, mushroom in marrow bean curd and smoked salmon fried rice. The harmonious interplay of yin and yang culinary masterpieces were complemented by the Shanxi China and Silver Heights Family Reserve 2007 from Ningxia, China.
To the clinking of crystal glasses and the animated and interesting conversation, members and their guests expressed their special thanks to Shangri-La Mactan Resort and Spa general manager Schutte, F&B director Abdul Hafid, executive chef Emmanuel Guemon and the entire team for such a splendid, memorable gastronomic experience amid genuine camaraderie and fellowship.
