Squash Tartlets

Pastry crust:

1 1/2 cups Maya Cornstarch

1/2 cup butter

1 tsp. vanilla

1 pc. egg

1/2 cup confectioners’ sugar

1/2 cup Gold Medal All-purpose Flour

Filling:

1 cup cooked and mashed squash

2/3 cup sugar

1/2 cup powdered sugar

1 tsp. vanilla

1 tsp. finely grated orange peel

Pre-heat oven to 350ºF.

In a bowl, mix all ingredients for pastry crust until smooth. Divide dough into 12 portions. Roll each portion on palm of hand to form balls. Press in bottom and evenly up sides of each hole of 12-hole muffin tins or tartlets molder. Bake pastry for 10 to 12 minutes or until light golden. Let cool completely, remove from tin.

Prepare filling: Blend all filling ingredients well. Fill up baked shells.
