Pinakbet, bagnet and igado at I-Republik

I-Republik is short for Ilocandia Republik, a new Ilocandia –inspired grill along Tomas Morato in Quezon City.

I-Republik is a sequel to the Red Crab group’s Blackbeard’s Seafood Island (with flagship stores in Market! Market!, Araneta Center, and Eastwood City Walk). In I-Ilokano, Filipino cooking goes regional. 

The Ilokano dishes include bagnet in binagoongan, bagnet in pinakbet and adobo, as well as clay pot comfort food like igado and imbaliktad. The rest of the northern connection is established with items such as Session Caesar salad, strawberry salad, and Camp John Hay American cobb salad.

Other must-try items in the menu are the pinakbet classic and pinakbet sili. There’s chicharon fried rice and longganiza fried rice and Ilocandia’s famous clay pot rice (usually cooked with a secret peanut butter concoction).

The kitchen is powered by two young Ilocano chefs Jerome Ragojos and Nell Badere.

French bread selections at Lartizan Boulangerie Française

Tucked in the corner of an establishment called Mickey’s Delicatessen is an airy, blonde-wood-and-brick bakery called Lartizan Boulangerie Française, where the bread selections are baked in batches throughout the day.

The tiny bakery showcases its baked goodies in warmly lit shelves.

What makes Lartizan bread special is its secret ingredient: the levain, a French sourdough-enhanced base.

Ilocos Sur comes to Intercon Manila

The InterContinental Manila’s Ilocano food festival at Café Jeepney is ongoing until May 31. Food lovers will be treated to the best of Ilocano cuisine as prepared by guest chef Peter Nic Rodriguez of Bistro Candon Restaurant in Candon City, Ilocos Sur.

Traditional and heirloom as well as the guest chef’s personal recipes will be part of the Jeepney’s lunch and dinner buffet spreads. Collaborating with the hotel for this festival in celebration of Philippine Heritage Month is the Office of the Governor of Ilocos Sur.

Among the Ilocano food classics offered are the different versions of dinengdeng, which chef Nic says should have “compatible vegetables,” bagnet, (deep-fried pork belly), pipian (a chicken dish of Mexican origin), higado, imbaliktad (an a la minute dish of beef tenderloin, spinal column marrow, liver and tripe), lomo-lomo (a dish of pork tenderloin, heart and liver), sapsapuriket (chicken and pork blood dish), lechon manok stuffed with carimbuwaya (an edible native cactus), dinardaraan (dinugoan), poque-poque (grilled eggplant dish), pinakbet, dinakdakan (sliced grilled pork face and liver), radish pod salad, pochero, sinanglao, tinolang manok, Vigan empanada, ginataang palaka (frogs’ legs in coconut milk), chicken afritada, canotillo, and masa podrida.  

Cafe Jeepney’s lunch buffet is available everyday from 12 noon to 2:30 p.m., while the dinner buffet is offered from 6:30 p.m. to 10:30 p.m. Monday to Saturday.
