Local ‘pulutan’ makes it to this American sports bar/resto’s menu
Celebrity chef Anthony Bourdain didn’t mince words when he said that the Pinoy’s pambansang pulutan “will lead the charge in Filipino cuisine’s rising international recognition.”
Although he had a soft spot for Cebu lechon, the rock-star chef said in one of his interviews that pork sisig would “win the hearts and minds of the world as a whole.”
Made from pork jowl and ears, pork belly, and chicken liver, this Kampapangan delicacy has made it to American franchise Buffalo Wild Wings’ (BWW) new menu.
“And we hope that the pork sisig, along with the 11 other new dishes, would be at par with Buffalo Wild Wings’ bestsellers,” said Rhoda Adriana, marketing manager.
Served on a sizzling plate, BWW’s Sizzling Pork Sisig doesn’t disappoint. The meat is seasoned well and has that crunchy and sticky texture. It’s topped with egg and chopped red chili.
According to Adriana, the new menu, their latest since the COVID-19 pandemic, features Asian-American fusion dishes.
“Our last menu update was prior to the pandemic,” she shared.
Asian surprise
The Bistro Group executive chef Josh Boutwood, together with BWW chefs, created mostly appetizers that go well with their chef-selected dishes. These include Chicken Thai Sliders, Crispy Pork Belly with Hoisin, Salt and Pepper Shrimps, Loaded Chicken Tater Tots, Original Nacho, Salted Potato Chips, Taco Fiestada Pizza, Fish & Chips, Crispy Tacos, Sticky Chili Chicken, and Chipotle BBQ Chicken Spring Roll, the American version of lumpiang Shanghai.
Though it’s so spicy, I couldn’t take my fork off the Sticky Chili Chicken — a flavor bomb that literally explodes in the mouth.
The recipes for the Sizzling Pork Sisig, Crispy Pork Belly, and Chipotle BBQ Chicken Spring Roll, Adriano explained, were sent to the American franchise for testing and tweaking before making it to the resto’s new menu.
“Once approved, the Philippines-exclusive dishes are then prepared using locally sourced ingredients,” she shared.
The Taco Fiestada Pizza is topped with your fave taco fillings, while the Tostaditas Pork (deep-fried tortilla) is loaded with pork belly, pickled onions, cucumber, shredded greens and drizzled with BBQ sauce.
“The new dishes pair well as pulutan because they’re perfect with BWW’s international beer, alcoholic, and non-alcoholic drinks like the mojito, which comes in strawberry, passion fruit, wild berry and black cherry variants.
Chicken wings with an attitude
Founded over 30 years ago in Ohio by buffalo wing-loving pals Jim Disbrow and Scott Lowery, BWW’s signature dish remains the award-winning buffalo wings handspun in their signature sauces, which range from mild to wild.
And what are Buffalo wings without a cold glass of beer? Here, the bartenders are trained in the honored art of ale, so the beer that they serve is always poured correctly for maximum flavor and freshness.
Before taking a gulp, check the glass for bubbles. A nice head of foam lets you know your beer is balanced and properly carbonated.
A sports for sports fans
Buffalo Wild Wings is the favorite hangout place of sports buffs. The restaurant is equipped with flat-screen smart TVs that capture the energy of a sports stadium.
However, while the staff can’t guarantee your team gets the trophy, they’ll make sure you’ll have fun watching. Sports are unpredictable, which is why they got wings, sisig, and beer!
