The golden anniversary of La Confrerie de la Chaine des Rotisseurs, the renowned gastronomic organization in 73 countries worldwide, was celebrated at Raffles Hotel last Sept.17.
The induction ceremony was so French traditional, dignified and honorable — from the fabuleux dinner to the amicableness of attending members and guests, to the skillful service staff at The Raffles Ballroom, which was bedecked for the event.
The delicate dinner feast was outstanding. The creamy sweet pea soup with mint and steamed lobster money bag, sous vide pigeon breast crépinette, goat cheese jus lie, grilled carrot and celeriac mash and German Black Forest Cake façon were marvelously executed by chef Béla and team.
A dream selection of any wine connoisseur was generously served: G.H. Mumm Brut Rose, Schloss Lieser 2019 Mosel, Chateau Leoville Barton, and Saint-Julien 2006.
A sprightly, jaunty and applaudable performance by accomplished musical theater actress Menchu Lauchengo capped the evening.
After dinner, officier maitre hotelier Bernd Schneider and Bailli de Manille member de conseil magistral Federico Borromeo joined the other guests at The Long Bar, where the celebration continued over after-dinner drinks and cigars.
