Filipino-adopted foreign dishes
CEBU, Philippines - While the Philippine cuisine may be said as “complete” on its own, Filipinos are always open to other tastes. Proof to this openness is how Filipinos give a twist to foreign dishes that they find good or interesting – and adopt it as their own, often using locally available ingredients as either additions to or replacements of the original components.
Examples of these Filipino-adopted foreign dishes, among many others, are the Italian Pizza and the Spanish Arroz Valenciana. These two have become separate Filipino favorites – the Arroz Valenciana being popular among the older generation and the Pizza being almost a common craving among the young. But the Filipino versions of these adoptive dishes only resemble the originals; to a good extent, these have become distinctly Filipino.

Pizza Pandesal
Hawaiian Pizza Pandesal is inspired by typical pizza made of oven-baked flat, round bread topped with tomato sauce, cheese and various toppings. It is made from pandesal as pizza crust, even leftover pandesal before its expiry. Those craving for pizza might as well start looking in the kitchen for the other – common – ingredients.
Estimated time of preparation: 15 minutes
Estimated time of baking: 8-10 minutes
Ingredients:
• 8 pieces big pandesal, cut in halves
• 140 grams pizza sauce or tomato sauce
• 100 grams mozzarella cheese or quick melt, grated
Toppings:
• 100 grams pineapple tidbits, drained
• 100 grams sweet ham, cooked and cut into cubes
Procedures:
1. Place pandesal in a flat surface, ladle enough pizza sauce into the center and spread it out at the edges.
2. Sprinkle shredded cheese on top, then arrange toppings evenly.
3. Spread shredded cheese on top of the toppings. Repeat for remaining pieces.
4. Pre-heat oven over 200 degrees Fahrenheit, then bake pandesal for 8-10 minutes or until the cheese is melted.
5. Remove from the oven then transfer to serving sheets or plates. Serve while hot.

Pinoy Arroz Valenciana
Arroz Valenciana is a dish similar to paella. The Filipino version of this dish makes use of coconut milk, malagkit (glutinous or sweet rice), boiled eggs, and chorizo, which is the very ingredient that gives the Filipinized dish its distinct character.
Celebrations in the Philippines, particularly in old communities, often call for Arroz Valenciana to be served. Christmas is one such celebration. Arroz Valenciana is, indeed, an option to consider for the family’s Noche Buena or for Christmas parties. It is also a perfect dish to serve during New Year’s Eve dinner.
Ingredients:
• 1/2 lb. chicken thigh or breast, chopped
• 3 pieces chorizo de bilbao, sliced diagonally
• 1/2 cup malagkit (glutinous white rice)
• 1 cup Jasmine rice
• 2 tablespoons tomato paste
• 1 medium red bell pepper, cut into strips
• 1/2 cup raisins
• 1/2 cup frozen green peas
• 1 teaspoon paprika
• 2 cups chicken broth
• 1 cup coconut milk
• 1 medium tomato, diced
• 1 medium yellow onion, diced
• 3 cloves garlic, crushed
• 3 boiled eggs
• 3 tablespoons extra virgin olive oil
• a pinch of Spanish saffron
• Salt and pepper to taste
Cooking Procedure
1. Combine the glutinous rice and jasmine rice. Wash with water twice and then drain. Set aside.
2. Heat the olive oil in a paellera or wide pan.
3. Saute the garlic, onion, and tomato until these become soft.
4. Put in the chopped chicken. Cook for 3 minutes.
5. Add the chorizo de bilbao. Cook for 2 minutes.
6. Add in the salt, pepper, saffron, and paprika. Stir well.
7. Pour in the chicken broth and coconut milk. Stir and let boil.
8. Add in the washed rice. Stir and let boil.
9. Add the tomato paste. Stir. Cover and simmer for 5 minutes.
10. Put in the raisins, and green peas. Cover and simmer for 8 minutes.
11. Add in the red bell pepper. Continue to simmer until the rice is fully cooked.
12. Garnish with sliced boiled egg. Serve.
