Leftover "Litson Manok" for sandwich

The Freeman

CEBU, Philippines – "Litson manok" - roast chicken Filipino style - has since become so conveniently available. There is now a "litson manok" stand at almost every street corner. It is not as fatty as the famed "litson baboy" - and more affordable.

As with any other delicacy food, however, the problem is the leftover - because two times out of three, there are leftovers. Some people apply their creativity in the kitchen, turning leftovers into something different from their original form. Often, the result is just as yummy, at times even yummier.

A sandwich made "litson manok" leftovers are very practical, handy and filling. Well, it's chicken sandwich by every any definition.  And it's very easy to make; in fact, it has become pastime of some to make chicken sandwiches and… more chicken sandwiches.

But the usual chicken sandwich can get boring after a while. The leftover "litson manok" can very well break the monotony. And the cheese in the following recipe can give warm comfort in these cold rainy days.
