CEBU, Philippines - The Confrerie de la Chaine des Rotisseurs Cebu took great pleasure in hosting the 17th Induction Diner Amical held at the Mactan Ballroom of the Shangri-La’s Mactan Resort and Spa.
Bailli Delegue-Chancelier Michel Lhuillier and his lovely wife Bailli de Cebu Amparito Lhuillier together with Shangri-La’s Mactan General Manager Joachim Schutte made everyone most welcome to the hotel.
Following the induction of 11 new members, namely Alexander Farruguia, Marc Cools, Vincent Frasco, Luke Gagnon, Grace Guinefolleau, Joachim Schutte, Abdul Hafid, Richie Kang, Markus Kraus, Glauco Muzzi and Jean Marc Pasquet, the Diner de Gala that followed showcased La Nouvelle Chinoise presented in lighter, more delicate dishes that emphasized on freshness and clarity of flavors while achieving the traditional Chinese sensibility for balance.
The first of a series of introductory courses included a trio of beef tenderloin, jelly fish roll and steamed chicken breast with ginger sauce. Next came pan fried scallop flavored with black bean paste. Both were paired with Riverside Riesling 2006 Balbach Rheinhessen from Germany.
The third dish was also a treat, barbeque fillet of duck accompanied by thinly sliced mango and Chinese plum sauce. This was served with Spy Valley Pinot Noir 2006. Marlborough, New Zealand.
The main course was an artful harmony of oven baked Chilean Sea Bass glazed in Miso paste, mushroom in marrow bean-curd and smoked salmon fried rice. The harmonious interplay of yin and yang culinary masterpieces were complemented with Shanxi China and Silver Heights Family Reserve 2007 from Ningxia, China.
To the clinking of crystal glasses and animated conversation, members and their guests enjoyed a most memorable dinner and fellowship.
