Halloween is just around the corner and though it may or may not be of interest to some, we are certain that there is that appeal behind it. Mainly a thrill for the children who enjoy trick or treating, or socializing for adults at fancy dress parties, Halloween can also be enjoyed by preparing a nice meal at home. As this time of the year just comes and goes by quickly, I share with you my favorite and “good for you” soup recipes, ideal for the Halloween season.
Traditional Pumpkin Soup. I use a large pumpkin, which I cut into chunks and cook them in a pot of boiling water until they are soft. Meanwhile, I chop some onions and mix them together with salt and pepper. Sometimes, when I’m in the mood for a bit of spice, I add some chopped red chillies, as well. As soon as the pumpkin has softened, I would combine the two together and heat in a shallow pot. Then, after a few minutes, I would either add a huge amount of coconut milk OR double cream (depends on what I feel like having) until the dish becomes “soupy.” On a normal day, I’d have my pumpkin soup as straightforward as possible, but on Halloween, I’d consider having it topped with crushed basil leaves, a drizzle of olive oil or a bit of melted butter served with bread on the side, bearing in mind that presentation somehow makes meals taste nicer.
Broccoli Soup. Another alternative is broccoli soup garnished with shredded carrots to enhance the Halloween colour. I would start by chopping a clove of garlic, which I sauté with oil in a shallow pot. I carry on by adding a decent amount of vegetable stock together with a huge amount of broccoli. Leaving it to cook for a few minutes until tender, I add a small amount of salt and pepper to taste and would then mash the mixture until it becomes “soupy.” On some occasions, I’d finish off the soup with a sprinkle of cheese, a blob of cream or a drizzle of olive oil on top, before serving.
One superb thing about these creations is that they are low in fat, but packed with a lot of vitamins. They are inexpensive, too. I do hope that you enjoy these recipes as much as I do. After the Halloween season comes Christmas. Who’s more excited now, you or me?!
