To celebrate its 15th anniversary, Shangri-La’s Mactan Resort & Spa launched its first Cebuano Food Festival at its famous Tides Restaurant with guest food consultant Jessica Avila. Avila notched years of culinary expertise in restaurant management, as well as being past president of HRRAC.

Tides now features a seafood odyssey through guso, lato, lukot (local seaweed varieties) and banana “heart” salads, as well as the ubiquitous kinilaw and kinusi-kusi nga nooks (dried squid). Main courses include the Cebuano version of fresh lumpia (fresh vegetable rolls), humba (pork stew), dinuguan (blood stew), along with a mouth-watering array of meats marinated overnight, ready for grilling.

Desserts are a treat to the senses: crunchy tagaktak, bibingka, budbud ug sikwate, biko ug latik, bukhayo, among many others.

Be sure to catch the Cebuano menus at Tides until October 25. It’s worth your trip over to Shangri-La.
