Waterfront's Gingerbread Sponge Pudding

Christmas is the sweetest time of the year not only because it is the time when we give gifts to our loved ones but also because it is the time for sweets. The holiday season is never complete without cakes, chocolates, fruits and salads!

To add to your growing list of goodies to prepare for your family this Christmas, here is a recipe from Renieer Villarin, Waterfront Cebu City Hotel’s Pastry Attendant. Enjoy!

INGREDIENTS

•100g butter    

•50g sugar       

•6pcs egg yolk 

•100g gingerbread crumbs

•50g cake crumbs        

•25g chopped orange peel

•25g chopped lemon peel        

•50g mixed fruit           

 •1/2pc lemon  

• 6pcs egg whites         

•50g sugar cinnamon cloves     

PROCEDURE:

In a mixing bowl, beat butter and sugar. When fluffy, slowly add the egg yolk.

Mix gingerbread crumbs and cake crumbs together then roast in the oven.

In a separate bowl, beat the egg white and sugar until it becomes a soft meringue. Fold into the butter mixture, then fold the candied fruits, lemon peel, cinnamon, sugar and the flour.

Pour into the desired mould and bake at 180 degrees Celsius for 20 minutes.
